Tomates à la Provençale recipe – a delicious starter and side dish

Bring on the taste of Provence! This Tomates à la Provençale recipe is easy to make and works wonderfully as a warm starter. You can also serve it as a side dish with chicken, lamb, tuna, or steak, for example.

This recipe serves 6 people.

Ingredients and preparation – tomatoes

6 firm, ripe tomatoes (about 7 cm in diameter)
Salt and pepper

Preheat the oven to 200°C (392°F). Remove the stems from the tomatoes and cut them in half horizontally. Carefully squeeze out the juice and seeds, and remove the pulp. Lightly season the tomato halves with salt and pepper.

Ingredients and preparation – stuffing

1-2 cloves garlic, minced
3 tablespoons finely chopped shallots
4 tablespoons finely chopped fresh basil and parsley, or only parsley
1/8 teaspoon thyme
1/4 teaspoon salt
A large pinch pepper
1/2 dl olive oil
1 dl breadcrumbs

Mix all the ingredients in a bowl. Fill each tomato with one or two spoons of the mixture. Drizzle a few drops of olive oil over the top of each stuffed tomato. Place them in a baking dish that’s large enough to fit the tomatoes in a single layer without crowding them.

Right before serving, place the dish in the upper third of the preheated oven. Bake for 10-15 minutes or until the tomatoes are soft but still hold their shape, and the stuffing is beautifully brown. Serve immediately when they are hot or warm.
